Orange zucchini-cake with poppy: recipe

Ingredients:

  • Flour in / c - 260-280 g;
  • Zucchini (grated meat without juice) - 300 g;
  • Poppy - 50 g;
  • Eggs (С1) - 3 pcs;
  • butter - 90 g;
  • Vegetable oil - 90 ml;
  • sugar cane - 150 g;
  • baking powder - 1 tsp;
  • salt - ½ tsp;
  • orange peel 1;
  • vanilla extract - optional.

Preparation:

Zucchini (clean or not - at your discretion) grate on a fine grater, give a little stand, then squeeze the juice.

Sift the flour with baking powder, add salt, mix.

Melt butter, add to it vegetable. Cool the mixture.

Eggs beat up with sugar until fluffy and increase in volume. Do not stop whipping, pour oil in portions, add orange peel. Pour flour mixture, mix.

Add the dough and grated zucchini to the dough, mix thoroughly (but not for long).

Pour the dough into prepared form (round, as for biscuit, d ~ 20 cm or brick) and bake in preheated to 180 degrees oven for about an hour. Time may be required and more depending on the form, so I recommend checking the readiness of a wooden skewer.

Ready-made orange zucchini-cake with poppy seeds should be cooled a little before getting out of the mold. Then put on the grate until completely cooled.

If you bake a cake, then the cake can be cut into 2 or 3 parts after cooling.
