Probably about the famous magkeyki (mug cake) heard everything. Quick "muffin cup" is prepared in a microwave often just a couple of minutes, and the fact that mixed the simplest ingredients, need a minimum of time. So, today, as a useful dessert I made myself a chocolate magkeyk from buckwheat flour.
To be honest, for a long time I was afraid of the oven "sweets" from buckwheat flour, because afraid characteristic taste (it should be said that in the flour from different manufacturers, it can be more or less intense), but absolutely nothing - in combination with cacao and coconut flavor is very harmonious!
I also liked the cake structure: since the buckwheat flour absorbs a lot of moisture (in 2-2,5 times more than regular flour), magkeyk in the microwave turns, like a sponge - a porous, rather dryish than wet.
From the time of its baking largely depends consistency (will bake a little longer - it will land, and vice versa).
Magkeyk buckwheat: recipe
- buckwheat flour - 2 tbsp;
- coconut (or coconut flour) - 1 tbsp;
- oat bran - 0,5-1 tbsp;
- cocoa powder - 1 tbsp;
- baking powder - ½ tsp;
- Salt - a pinch;
- 1 egg;
- milk* - 50 ml;
- water (hot water) - 100 ml;
- sugar / syrup / stevia - to taste.
*Also suitable and coconut / almond milk.
Mix all dry ingredients.
Egg whisk whisk well, add the milk.
Connect the dry and wet mix. Add the boiling water (about 100 ml): it may require a little more or less. Stir until smooth. The consistency of the dough should be like sour cream.
Magkeyk Bake in microwave at full power 1,5-2,5 minutes (every minute open and check). It took me about 2,5 minutes. If baked in the oven (15-20 180 minutes at grad.), Then choose the right dishes!
From cups MIGA almost immediately removed very easily (but be sure to use is still not high, but a wider bowl to a cupcake could propechsya).
Experiment: add berries, cinnamon, dried fruit, poppy seed or chia seeds, chocolate drops.
