I think I have said many times that the first dish and cook it rare (but now is not about that :), but the soups I love tender love. Cream of celery and peas with smoked salmon - my latest "discovery". Easy and hearty at the same time, the taste of peas in it, it must be said, hardly noticeable, it dominates celery. A red fish perfectly complements this tandem.
Frankly, if I eat the soup, the main course after it had not, for this reason, if the cook soups, trying to "enrich" their protein and complex carbohydrates. On my system, the power - it is the perfect combination for lunch. This soup can rightly be called the main course :)
If you've never tried the soup of celery (it happens once in and out of one), be sure it is correct! In my opinion, the taste is very delicious! It can add cauliflower or broccoli, add a little carrot or pumpkin for color, if you like potatoes, you can put it as well.
You can cook meatless soup of celery, it is without a doubt good, too, and it is possible - with chicken or fish, it will increase its nutritional value.
Today I will tell you in detail how to cook soup of celery and peas with smoked salmon.
Cream of celery and peas with salmon: Recipe
Ingredients (for 4-5 servings):
- Dried peas - 1 glass;
- celery root - 1 medium or ½ large root;
- salmon (or other red fish) - 400-500 g;
- salt - to taste.
Soak peas, at least for a few hours or overnight. Then drain the water, wash it a bit and put to boil in a large saucepan. After boiling, remove the foam, reduce heat. Season with salt to taste.
In a separate pot put to cook the fish. After boiling and remove the foam, a little salt and cook 20 minutes. Then remove the fish, a little cool it and, if necessary, separate from the bones.
Celery clean, cut cubes randomly on average (size does not matter, because we are preparing mashed potatoes).
Cook peas 20 minutes (after boiling), add it to the root of the celery. Shoot foam as required. And cook for another minute 40 (try - peas must be soft enough to mash, celery during this time will definitely be ready). Yes, if the water will boil, then add it.
Drain the broth in a separate bowl (it we still need). With the help of a blender chop the celery and peas in a saucepan just until smooth, adding broth in small portions. Density adjust at their own discretion: if you love thick, then take a little broth if slush - add more.
In the finished soup of celery and peas, add the pieces of fish, put the pan back on the stove and bring to a boil. Cook a minute, remove the soup from the heat.
When serving soup garnish with your favorite greens (excellent fit dill, parsley, basil, cilantro) or pumpkin seeds, you can also sprinkle it with grated parmesan cheese - will be canceled!
